Is there a way to set up the submenu's in HVMenu so that they show beneath your main menu horizontally? Also, it there a way to change the arrow from pointing down to have it point to the right in horizontal menu setup?

As far as I can see there is no way within the existing code that this can be achieved. I'm pretty sure that I've seen something like this on DynamicDrive, but can't remember what it was called. You could try CoolMenu as it has an option for sub menus of sub menus to be horizontal but I'n not too sure that it will do it from the main menu. Sorry I could not be of more help.An answer needs a question just as much as a question needs an answer. Deep eh!
